Dried beans and cheese. Not a usual combo, although in chili they can be great. What about them is so connected at this time of year? They're both really good when there isn't a lot of fresh and blooming in the marketplace. But we have to remember that beans don't last forever just because they're dried, doesn't mean they're permanently available no matter what.
How many times has somebody taken the dried beans from last season and soak them in water, and cook them up, and they never got tender and they never got flavorful because they were 3 years old.
