We don't always hibernate, like the big bears that we're supposed to avoid. So, we don't load up in the fall and early winter to be able to go into a cave and just nap. But, we do load up through the winter because cold burns calories. And in point of fact, we do need some extra, I don't know, available whatever because that's what our body needs.
And I got to tell you, this is a strange time in in culture after all these years of running away from this and running away from that in foods. Fat is where the flavor is and apparently it's back in fashion. Tallow, lard, butter kind of makes me happy. My gym guy tells me that you can't burn fat unless you eat fat and fat is absolutely delicious in the right amounts with the right other fresh lovely ingredients.
